





维生素C白色至浅黄色结晶性粉末,无臭,有酸味,熔点约190℃。受光照后逐渐变成褐色。干燥状态时在空气中相当稳定,在水溶液中则含量迅速降低,pH3.5~4.5时较稳定。1g约溶于3mL水、30mL乙醇,不溶于氯仿、乙醚等有机溶剂。
维生素C可作为抗氧化剂的食品原料和食品添加剂。
维生素C具有较强的还原性,加热或在溶液中易氧化分解,在碱性条件下更易被氧化。
